Prep-Ahead Chipotle Breakfast Burritos

Chipotle as in "the chilis" not as in "the restaurant"

I've been interested in vacuum sealing meal prep food because I tend to suffer when my food gets freezerburnt or goes bad in the fridge, so this is a little experimental. This is 1 of 2 burritos I will be prepping today! Recipe and more below!

Ingredients + vague instructions bc i made it up:

  • 10 chili-tomato tortilla wraps (big size)
  • 10 eggs and a splash of half and half (scrambled)
  • 3 large potatoes, diced and fried in a pan til nearly-done
  • 1 large red bell pepper and a medium white onion, diced fine and also fried with the potatoes
  • 2 cups of pepperjack cheese, shredded
  • 1 lb of breakfast sausage, browned nice and crispy
  • 4 thick cut slices of ham, diced and browned with a little brown sugar and butter
  • Chipotle mayo, made with 1 can of chipotles in adobo, about half a cup or more of kewpie mayo, 1/4 cup sour cream or more, and as much dijon as I had left in my bottle. i diced 2 of the chilis up really fine into mush, but left the others whole and just stirred them in, they got tossed at the end because i didnt want a big chunk of a chili like that in too many burritos, but they did flavor the mayo extremely well.
  • Spread the mayo on half of the wrap, top with a good sized scoop of each ingredient, trying to eyeball what felt like 10% so i didn't run out or have anything left over. Watch 3 different videos on how to roll burritos and try and get fairly okay enough at it by the end.

    Vacuum seal, label, and store for up to a year i think? idk these will probably get eaten this week. I air fry mine for 10 minutes at 400f, my roommate likes to microwave his.
