Sourdough Oat Waffles

Dry Ingredients:

  • 1lb (or 4 1/2 Cups roughly) Oat Flour
  • 1 tsp Baking Soda
  • 1 TBSP Sugar
  • Salt (to taste, I used 1/2 tsp)
  • Wet Ingredients:

  • 2 large eggs
  • 2 1/2 Cups Buttermilk
  • 1/2 Cup Active sourdough starter*
  • 1/2 Cup melted butter
  • Directions:
    1. In one large (quite large!) bowl, whisk the wet ingredients together (make sure the butter has cooled a bit so the eggs don't cook!).
    2. In a smaller bowl, whisk the dry ingredients together well.
    3. Slowly whisk in (or use a hand mixer/stand mixer) the dry ingredients into the wet ingredients. Go slowly and be sure to get out all the clumps. Add water or more buttermilk as needed to create a batter that isn't chunky.
    4. Cover loosely and let sit for at least 30 minutes (overnight is also an option! But do that in the fridge).
    5. Preheat and grease waffle iron.
    6. Ladle batter by half-cupfuls into waffle iron and cook for around 5-7 minutes, checking the heat of your iron and cooking to preferred crispiness. Re-grease between waffles to prevent sticking.

    Variations: Anything can be mixed into the batter, I experimented with caramelized onions and bacon! Try cinnamon, chocolate chips, fruit (that isn't too moist), or spices!
